Pumpkin Spice Porridge

Halloween is coming up, the landscape has turned orange, you know what it means… time to get extra cozy for autumn! For the occasion we teamed up with Kenya and Sasha, co-founders of Brussels' future best eatery, Seven (coming up soon 👀). They have prepared an incredible Pumpkin Spice Porridge breakfast recipe that we’re absolutely obsessed with. Here’s how it goes: 

You'll need

  • 80g quick oats
  • 120g pumpkin puree (you can find some in the canned food or baby food section)
  • 1 apple
  • 1 tbsp coconut oil
  • 120ml milk (of your choice)
  • 1 tbsp coconut yogurt
  • Cinnamon
  • 2 tbsp maple syrup
  • 40g pecans
  • Pumpkin seeds and apple chips

Recipe

Start with the caramelized pecans : mix the pecans with 1 tbsp of maple syrup and bake for 5-8 minutes at 200°.

Then in a pan, cook apple quarters with coconut oil and a pinch of cinnamon until golden. In a small saucepan, bring the milk, water and pumpkin puree to a boil. Add the oats with a tbsp of maple syrup and stir until combined. Let it simmer for 3-4 minutes.  

Serve the porridge in a large plate, with a big spoon of coconut yogurt and a dash of maple syrup. Top up with caramelized pecans, pumpkin seed, apple chips, almond butter and our Caramelized Almonds & Pecans granola.
